Camparitini Martini

  • 6 parts gin
  • 2 parts triple sec
  • 1 part campari

Mix in a shaker full of ice, shake, and pour into large martini glass. Enjoy with orange twist for garnish.

The campari acts as the bitters in the drink to add that nice bit of dryness.

Nettie’s Most Awesome Beets Recipe

This is as close as we have been able to get to Nettie’s Beet recipe. She was a Ukrainian neighbor who always brought these to the table as her share dish.

  • 3 Large Beets
  • 1 Onion (red onion or walla walla)
  • 1 Bay Leaf
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 1 – 2 tbsp Vinegar
  • 1 – 2 tbsp Brown Sugar
  • 1 -2 tbsp cornstarch
  • Butter to taste

Boil beets whole under tender in a covered pot or steamer. Once they are cool enough to handle, remove skis and slice thinly or cut into julienne strips (I use a mandolin). Place them in a pot with onion, bay leaf, cloves, salt and approximately 1/2 cup of water.

Bring to boil and simmer until they are well done (about 1/2 hour).

In a bowl mix vinegar, brown sugar and cornstarch. Add to beet mixture and stir until thickened on medium heat. Add butter and enjoy!


Vancouver Chocolate Milkshake Diet I love the taste of the Xocai ProteinMeal Shake, however, sometimes I like to mix things up a bit and try new flavors. In Vancouver, I use the Xocai weight loss shake as a base for making healthy high-antioxidant Delta diet smoothies. Here are some of the Weight Loss Smoothie recipes and my local Delta Xocai chocolate shake review. Each recipe needs to be blended thoroughly in a blender or food processor.

The Xo and Tell: 1 cup water, 1/2 cup X ProteinMeal Shake, 1/4 cup frozen blueberries, 1/2 frozen banana, 1 cup chopped ice. Tastes like a seven dollar Delta juice bar smoothie but much healthier.

X Mocha Frappe: 1 cup cold black coffee, 1/2 cup Xocai ProteinMeal Shake, 1 cup chopped ice, 2 fresh mint leaves. Surrey coffee lovers will enjoy this high antioxidant version. The mint gives it an interesting twist.

The X Monkey: 1 cup almond milk, 1/2 cup Xocai ProteinMeal Shake, 1 TB chunky peanut butter, 1/2 frozen banana, 1 cup chopped ice. If you are a Delta PB fan, you’ll this concoction. You can find Vancouver almond milk at Langley health food stores or at Richmond grocery stores with large health food sections.

The Chocolate Orange Cream-sicle: 6 ounces water, 1/2 cup MXI Chocolate ProteinMeal Shake, 2 ounces almond milk, 1 banana, 1 cup chopped ice, 2 drops orange essential oil. Tastes like a Vancouver Roxberry Orange Creamsicle smoothie. This flavor made me very nostalgic–I used to live on creamsicles all summer long as a child. The banana boosts the potassium content.

Xo-Good: 1/2 cup water, 1/2 orange juice, 4 chunks frozen mango, 1/2 banana, 1/2 cup Xocai Weight Loss Shake. If you are a Delta mango freak, you will find this mango-licious.

Caesar Salad Dressing

  • 1 coddled egg yolk*
  • Juice of one medium sized lemon (watch for seeds)
  • 5-8 garlic cloves
  • 4”-5” squeeze of anchovy paste (Giovanni’s)
  • ½ – 1 tsp salt (or to taste)
  • 1 tsp pepper
  • 1 tsp (dry) mustard
  • 4-6 drops Tabasco
  • 1 tsp Worcestershire Sauce
  • 2 tablespoons of grated parmesan or asiago cheese
  • 1 tablespoon of balsamic vinegar
  • 5 tablespoons of extra virgin olive oil

I’m fortunate to have a Braun hand mixer and place all the ingredients into a container and blend. If you don’t have that luxury you will need to crush garlic and then hand mix everything together.

Pour dressing over hand-ripped romaine lettuce leaves in salad bowl. Add croutons and a generous portion of freshly grated parmesan cheese. I choose to use my hands, but you can use salad spoons to toss salad to mix. Sprinkle a little more grated parmesan cheese on top. Grind a little more pepper on top. Serve and enjoy.

 * to coddle the egg I usually place the egg in a measuring cup and then pour hot water over the egg and let it sit for 3 – 5 minutes

  • 1 pound of cooked dungeness crab meat
  • 1 pound of cooked baby shrimp meat
  • 1 whole egg
  • 1/2 cup of mayonnaise
  • 1/2 cup bread crumbs (have used panko)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon tarragon vinegar
  • 1 tablespoon lemon myrtle steeped in hot white wine, cooled
  • 2 tablesppons heated white wine
  • 1 bunch green onions chopped
  • 1 teaspoon cracked white pepper

Preparation time is 20 minutes

Remove any shell from crabmeat. Press the crab and shrimp meat in strainer to remove as much moisture as possible.

Mix all ingredients and let sit for 30 minutes.

Form into 4 pucks-shaped cakes. Pan fry in a non-stick pan with a touch od oil until golden brown.

Yields 4 servings.

Note: We have used Lemongrass steeped in white wine.
