This is as close as we have been able to get to Nettie’s Beet recipe. She was a Ukrainian neighbor who always brought
these to the table as her share dish.
- 3 Large Beets
- 1 Onion (red onion or walla walla)
- 1 Bay Leaf
- 1/4 tsp cloves
- 1/4 tsp salt
- 1 – 2 tbsp Vinegar
- 1 – 2 tbsp Brown Sugar
- 1 -2 tbsp cornstarch
- Butter to taste
Boil beets whole under tender in a covered pot or steamer. Once they are cool enough to handle, remove skis and slice thinly or cut into julienne strips (I use a mandolin). Place them in a pot with onion, bay leaf, cloves, salt and approximately 1/2 cup of water.
Bring to boil and simmer until they are well done (about 1/2 hour).
In a bowl mix vinegar, brown sugar and cornstarch. Add to beet mixture and stir until thickened on medium heat. Add butter and enjoy!
